You'll get a lot more taste here and you'll wonder why you spent so much time chasing after cabs.

Thanks, I'll keep an eye out for those.

I've still got that Caymus to show me what a fantastic cab can be. A lot is gonna ride on those shoulders.

Cheaneuf du Pape produces Rhone styles which yes include Grenache, Syrah, and Mourvedre blends.

Those wines are where it's at if you want big taste. Cabs get boring or at least have for me although yes cab is king.

So if I'm gonna give GSM blends a shot, should I go with a domestic first or a Chataneuf du Pape?

Drinkward Peschon is a good value and they are cool people.

I ordered a case from them and they sent it to me before ever charging my credit card. I asked them if they ever planned on charging me for the wine and they said to enjoy it and they would when they got around to it. I was like, um, ok.

    Dang, that is pretty cool.

So how was the wine? I understand they only have one, and it's a blend?

Yes it's a Bordeaux style blend. It's not bad pretty delicate and soft. It's nice but not awe inspiring. Better than a lot of stuff in its range though.

You'll like it. Just don't expect to be blown away.

I noticed there are a few Bordeaux blends that seem pretty popular. I think Dominus is one right?

Picked these up today to satisfy my Washington curiosity:
'09 Chateau Ste Michelle Canoe Ridge Cabernet
'10 Chateau Ste Michelle Cold Creek Cabernet
    '10 Januik Cabernet

And picked up these GSMs to see what the flavor profiles are all about:
    '11 Hahn GSM
    '10 Cameron Hughes Lot 339

Oh man Dominus is about as good as the Bordeaux style gets. If I'm going to reach for that style I can't think of anything better. Superior to Opus One IMO although I mean you aren't going to go wrong with either. Pahlmeyer is pretty great too in this range. The best value for this style is the Beringer Private Reserve.

A more modern version with more fruit would be the Bond Matriarch. Harlan's grapes and barrels but at a fraction of the Harlan label.

I'm not familiar with those that you picked up other than Chateau Ste Michelle.

If that was properly stored you will enjoy it.

Don Melchor is one of the best Chilean cabs. It's a great wine.

It was quite good. I only decanted it for about an hour because I am impatient. I'm sure a few more hours and it would have been even better.

Can you compare it to any other known cabs?

I've been curious about Chilean cabs, as well as South African.

They have an 'earthier' style but really Chilean cabs are all over the place. A lot of good wine from down there.

    Look into Clos Apalta.

Chilean cabs are great to me and then I also enjoy the Merlots from NZ.

Who brings their own bottles to restaurants and just pays the corkage ? How do you deal with timing and the lack or decanter ?

I decant before I bring it in and pour it back in the bottle.

I do the same as Sticky. But if you're not in California, might be a good idea to check to see if it's legal and even if it is legal, see if the restaurant is okay with you bringing an open bottle.

I know TX required a seal by the store or restaurant to be deemed safe for transport but OK will just take it from you if stopped.
