Each meat takes its own time. All you can plan on is having the largest last meat being done at X time. Honestly a large WSM should be more than enough with sides etc.

I think part of my issue was the ash. Even with the vents wide open it was taking a while to heat.
I always used the water bowl...time to go read more about it.

I use water. I had the vents open most of the way and the temp still took forever to rise. Maybe I need to clean the ash out, I also didn't think it started great. I use an electric starter to get it...

I use the Royal Oak lump charcoal. The other day I was just having issues with it. Maybe it was operator error. Just took forever for the heat to increase and seemed to just want to stay at 200.
